2 cups Baby spinach
3 cups Chicken stock
- Garlic: 2 cloves, minced
- Salt & black pepper: to taste
1/2 tsp Sesame oil (optional)
1 tbsp Green onion (optional garnish)chopped
Steps to Make Cozy Bowl Egg Veggie Soup
- Bring the chicken stock to a gentle boil in a pot. Add the minced garlic and let it simmer for 2–3 minutes so the flavor infuses into the broth.
- Lower the heat and slowly drizzle the beaten eggs into the pot while stirring in a circular motion to form soft egg ribbons. Add the baby spinach and cook for another 1–2 minutes until just wilted.
- Season with salt and black pepper, then finish with a touch of sesame oil if you’d like extra aroma. Garnish with chopped green onion before serving. Enjoy warm and cozy.
